1. Caponata (Sweet & Sour Eggplant Dish)

Ingredients:


- 2 large eggplants (cubed)

- 1 onion (chopped)

- 2 celery stalks (chopped)

- 2 tomatoes (chopped)

- 1/4 cup green olives (sliced)

- 2 tbsp capers

- 2 tbsp red wine vinegar

- 1 tbsp sugar

- Olive oil

- Salt & pepper


*Method:*


1. Heat olive oil in a pan and fry the eggplant until golden. Remove and set aside.

2. In the same pan, sauté onion and celery until soft.

3. Add tomatoes, olives, capers, vinegar, and sugar. Simmer for 10 minutes.

4. Stir in the fried eggplant and cook for another 5 minutes.

5. Let it cool before serving. Best enjoyed at room temperature!



2. Arancini (Sicilian Rice Balls)

*Ingredients:*


- 2 cups Arborio rice

- 1/2 cup Parmesan cheese

- 2 cups beef ragù (or vegetarian alternative)

- 1/2 cup peas

- 2 eggs

- 1 cup breadcrumbs

- 1/2 cup flour

- Mozzarella cubes

- Salt & pepper

- Oil for frying


*Method:*


1. Cook rice and mix it with Parmesan cheese. Let it cool.

2. Take a small handful of rice, flatten it, and add a spoonful of ragù, peas, and a mozzarella cube. Cover with more rice and shape into a ball.

3. Roll each ball in flour, dip in beaten eggs, then coat with breadcrumbs.

4. Deep fry until golden brown.

5. Serve hot with a side of marinara sauce!




3. Cannoli (Classic Sicilian Dessert)

- 2 cups flour

- 1 tbsp sugar

- 1/2 tsp cinnamon

- 2 tbsp butter

- 1/2 cup Marsala wine

- 1 egg

- 1 cup ricotta cheese

- 1/2 cup powdered sugar

- 1/4 cup chocolate chips

- 1 tsp vanilla extract

- Oil for frying


*Method:*


1. Mix flour, sugar, cinnamon, butter, and Marsala wine to form dough. Let it rest for 30 minutes.

2. Roll out and cut into circles. Wrap around metal cannoli molds.

3. Fry until golden brown, then remove and cool.

4. Mix ricotta, powdered sugar, vanilla, and chocolate chips for the filling.

5. Pipe filling into shells and dust with powdered sugar before serving.
